The jujube ... a particular fruit, ideal for making a liquor to be served after the meal, which surprised and intrigued guests.
Here is the recipe, taken from The Cooking of Casamia Fall 2008.
Ingredients: 8
dl of alcohol at 90 °
500 gr.
sugar 1 vanilla pod
400 gr. jujube
Preparation: Peel
jujubes, then mash them and put them in a jar with alcohol.
Let stand for one month, stirring occasionally.
Then filter, then combining the cooled sugar syrup, prepared by boiling 2 dl. water with sugar.
Let stand for 6 months and mature in a cool, dark place. So
bottle and serve.
